Coco-cola Cake

Sounds intriguing, doesn't it?  When I saw the picture on pinterest, I knew I had to try it.  

Luckily, I had the ingredients on hand, so I started baking.  The kids had fun helping with this one.  We got the cake baked with only one boil over (when the recipe says medium-high they mean it) and a quick run to the store for powdered sugar while it was in the oven....pretty amazing for getting in and out of a supermarket with 3 kids in tow and getting home with 6 1/2 minutes to spare before the timer went off.  HOLLA!!!  ;)

It was DELICIOUS!!!!  You don't really taste the coke in it, but it is a light chocolate flavor, but a rich cake if that makes any sense.  When I make this again, I'll change a few things.  I would bake it as a sheet cake instead of the 13x9 pan.  I would also add a teaspoon of vanilla extract to the glaze.  

It was also a hit with my family.  The hubby and kids all liked it.  I like it best served warm, so nuke it in the microwave if you like.  Enjoy & happy pinning!!! :)


Update:  I made this in a sheet cake and added the vanilla to the glaze....pure perfection!!!!
